I suggest that Connect To Outlook allows users to choose what parts of the email to store witin the store dialog.
When storing an email, many users would prefer to be able to choose what part of the email to store. There are 3rd party add ons that allow this. It is frustrating for users when the logo from their email signatures are stored and is the first thing displayed in the viewer instead of the important PDF that was attached.
Starting in Version 6.8 we added the ability to strip images in email (by size and type). In 6.9 we added the ability to exclude all inline images. In the dialog you have the option to choose what is stored first, the email body or the attachments. Additionally, with Version 6.11 you will be able to store each attachment individually with separate store configurations.

Is something in the works to allow the connect to Outlook plugin to remove the inline images like the logo from the signature from the email?

The requested feature will be introduced with the coming version in fall 2015. Details will be published during the market launch.

To be more precise. When my users receive an email with multiple attachments (3 PDF for example), they need to store each attachement with different metadatas.
The Outlook plugin should let the user choose for each attachement, if it's stored and which metadata
