This would be very helpful in documenting decisions (approvals or rejections) between different steps in a workflow. A single line text field is difficult to read and difficult to update in multiple people need to add to it.

I agree with all of these points, and have had a handful of customers reach out to register their complaints with the new interface.
I suspect that this interface looks usable on a large screen monitor, but it's difficult to use on a laptop monitor, which many of our customers continue to use. The description above, about the information density and the amount of empty space is correct. Also, the fact that the document itself has been shrunk is also a step backward. The document should be the primary feature on the screen at any given time, and should be as large as possible. Index values in search and store dialogs should be much more compact. Result lists should display a lot more content without have to continuously grab and adjust scroll bars. Index value columns in the result list should remember modification to column orders on an individual users preferences. These are just a few of the items we've received as feedback from our customers.
We all appreciate how hard the developers work to innovate and improve the experience for all of us. I think a little more refinement on the new interface will produce a result we can all be happy to use.
